Chocolate and banana toast

A sweet whole-bread breakfast pairing seventy percent dark chocolate spread with ripe banana. Slow sugar release thanks to the fibre in both wholemeal and fruit.

    Pick a banana with a few brown freckles on the skin: starches have converted into natural sugars, the flesh stays firm enough to slice cleanly.

    Slice the banana on a slight diagonal into rounds of half a centimetre. Diagonal cuts give more surface contact with the chocolate.

    Toast the bread

    Toast the whole bread for three minutes on medium heat. The crust should crisp lightly, the centre stay tender to absorb the chocolate.

    Spread the chocolate

    Spread one tablespoon of dark chocolate spread on the warm toast. Heat softens it into a glossy layer that grips the banana slices.

    Arrange and serve

    Arrange the banana slices in a single layer, slightly overlapping. Cut on the diagonal and serve with a glass of water or plain green tea.
