10 minPlace the bones in cold water, bring to a boil, skim continuously for 10 minutes.

Long simmer
230 minLower the heat. Simmer covered for 4 hours. The broth should remain clear, without strong boiling.

Finish
5 minStrain. Salt to taste. Stir in the ghee just before serving.
