15 minBoil the crab in 1.5 L lightly salted water for 15 minutes. Reserve 1 L of the cooking liquid.

Shell and reduce
12 minShell the crab, set the meat aside. Return the shells to the broth, reduce 10 minutes, strain.

Finish
3 minWhisk the butter and cream into the strained broth on low heat. Add the crab meat, warm through, do not boil.
