Tayyibat in the UAE : Dubai, Abu Dhabi food scene adapted

The UAE combines Gulf tradition (kabsa, mandi, machboos) with the highest density of Western chains in the Arab world. The challenge is the brunch culture : eggs benedict, pancakes, croissants, all khabaith. The solution is to embrace local Emirati cuisine instead : machboos with lamb on rice, harees, balaleet without sugar, fresh hammour fish grilled simply. Dubai has excellent specialty shops (Spinneys, Carrefour international, Lulu) where you find raw Lebanese tahini, Saudi ghee and grass-fed lamb without effort.

Sourcing in Dubai and Abu Dhabi

Deira fish market for fresh hammour, sherri and shaari. Spinneys Marina for raw tahini and Saudi ghee. Waitrose Dubai Mall for grass-fed New Zealand lamb. Carrefour Lulu for affordable basics. Avoid all hotel buffets, Costa, Starbucks, and bakery chains.

Local tip

Tip UAE : avoid all delivery apps default sauces. Order « plain rice plus grilled lamb plus ghee on the side, no sauce, no salad ». Most kitchens accept the modification at no cost.
