Steps

  1. 01

    Slice the cheese

    1 min

Slice the cheddar into thin strips of two millimetres so it melts evenly without forming an oily pool on the bread.

  2. 02

    Toast the bread

    3 min

Toast the whole bread on medium heat for three minutes until the surface turns light gold and the centre stays soft and steamy.

  3. 03

    Melt the cheese

    2 min

Lay the cheese strips over the hot toast and cover with a plate for two minutes. Residual heat melts the cheddar without browning it.

  4. 04

    Drizzle honey

    1 min

Drizzle a thin thread of raw honey diagonally across the melted cheese. The contrast between salty cheddar and floral honey is the signature of this breakfast.

  5. 05

    Cut and serve

    1 min

Cut the toast diagonally into two triangles. Serve immediately with green tea or a small black coffee while still warm.
