3 minToast the whole bread on medium heat for three minutes until the surface turns light gold and the centre stays soft and steamy.

Melt the cheese
2 minLay the cheese strips over the hot toast and cover with a plate for two minutes. Residual heat melts the cheddar without browning it.

Drizzle honey
1 minDrizzle a thin thread of raw honey diagonally across the melted cheese. The contrast between salty cheddar and floral honey is the signature of this breakfast.

Cut and serve
1 minCut the toast diagonally into two triangles. Serve immediately with green tea or a small black coffee while still warm.
