Traditional Saudi breakfast

The morning of a traditional Najdi household in Riyadh: fresh qishta cream spooned over warm Medjool dates, a thread of raw mountain honey, a cup of unsweetened Arabic coffee with a touch of green cardamom. Ten minutes, no cooking, palette-pure. The original Saudi breakfast before the Western brunch invasion.

Steps

    Brew the cardamom Arabic coffee

    Crush four green cardamom pods lightly. In a small Arabic dallah or saucepan, heat 400 ml of water with the cardamom and three teaspoons of finely ground light-roast Arabic coffee. Bring to a slow simmer two minutes, do not boil hard. Pour through a fine strainer into two small cups. No sugar, no milk.

    Plate the cream and dates

    Slit the dates lengthways, remove pits. Arrange six per plate. Spoon a generous dollop of fresh qishta cream beside the dates (about 100 grams per portion). Drizzle a tablespoon of raw honey over the dates and cream.

    Serve and savour slowly

    Serve the coffee in small cups beside the cream-and-dates plate. Eat by spreading qishta on a date with the spoon, drizzling honey, and sipping coffee between bites. The traditional ritual is unhurried, family or solo, sitting on cushions on the floor.
