Khabith: What the Word Means, and What It Sets Aside

You meet the word on every page about this way of eating, and almost nowhere is it defined. It has one meaning, and it is narrower than people assume.

The word, and its opposite

Khabith is an Arabic word. In this system it is the opposite of tayyib, and the pair carves the whole of food in two: what is kept, and what is set aside. The first misunderstanding to clear away is that khabith is not a moral verdict on the person eating. It is a statement about the food and about what the body has to do with it. The second is that it has nothing to do with counting. A food is not khabith because it is rich, and it is not tayyib because it is light. Some of the densest foods on the list are kept.

The criterion: what the body has to do with it

A food is set aside when the body cannot finish with it cleanly. Either it cannot break it down, or it can only do so at a cost. That covers three situations. Foods the human digestive system was never equipped to take apart. Foods that have been transformed so far from their original state that what arrives is no longer what grew. And foods that hold the stomach open longer than it should stay open, because everything that follows in the day depends on the stomach having finished. So the question to ask about an unfamiliar food is not how many calories it carries. It is whether the body can finish with it, and at what cost.

The families that are set aside

In practice the same groups come back. Refined flour and everything built on it. Sugar added to things that did not have it. Anything fried. Industrial pastry, packaged snacks and soft drinks, which are the clearest case and are covered on their own in the article on the modern khabith. Then come families that surprise people, because they carry a good reputation elsewhere. Farmed poultry. Eggs. Fresh milk and fresh dairy. Pulses. A number of raw vegetables. It is the only place where the list is complete, because a list without its reasons is impossible to apply to a food that is not on it.

The same food can change camp

This is the part that trips up most newcomers, and it is what makes the system harder to copy than a simple list. Several foods are tayyib or khabith depending on how they are prepared. Onion is kept once it is cooked and set aside raw. Tomato is kept when it is peeled, deseeded and cooked. Bell pepper is kept cooked and set aside raw. Potato is kept, but not turned into chips. So a list of names alone will always mislead you at some point. What decides is the state the food arrives in, not the name it carries at the market.
